My Carrot Cake Recipe: A Deliciously Spiced Homemade Treat

Looking for a homemade snack that is sweet but has a little something extra going for it?

One of the things I have discovered on my journey toward living a healthier lifestyle is that eating healthy sometimes, calls for finding ways to cook the things you love at home and being more intentional about what goes into them.

And one of the snacks I have come to enjoy is a carrot cake.

Now, before we get carried away, let me clarify something.

Carrot cake is still cake. 😀

It contains sugar, oil, flour, and all the other things that make cake… well, cake.

But because it also contains carrots, raisins, and warming spices, I like to think of it as one of those treats that brings a little extra goodness to the table.

And honestly?

It is delicious.

The combination of grated carrots, sweet raisins, cinnamon, cloves, and nutmeg creates a beautiful balance of sweetness and spice.

The carrots help keep the cake moist, while the raisins add little bursts of sweetness throughout.

And the spices?

They are what really bring everything together.

Each bite just gets me all mmmmmm, yassss.

I like taking my time when I eat this cake because there is so much going on in every bite.

You get the softness of the cake, the little chewiness from the raisins, and then that warm, spicy flavour from the cinnamon, cloves, and nutmeg.

I like to call my version “Masavu.”

For those who may not know, masavu is a Luganda word that has been popularized by Ugandan musician Azawi and is used to describe something that is really good or impressive.

And honestly, this cake really is masavu.

Why Carrot Cake?

Carrots might not be the first ingredient you think about when you hear the word “cake,” but they work surprisingly well in baking.

Grated carrots add moisture to the batter, which helps produce a soft and tender cake.

They also bring their natural sweetness and a little texture without overpowering the other ingredients.

Then there are the raisins.

I absolutely love raisins in carrot cake because they add little pockets of sweetness without needing to add even more sugar to every bite.

Combined with cinnamon, cloves, and nutmeg, they give the cake that warm, comforting flavour that makes it especially enjoyable with a cup of tea or coffee.

This particular recipe has also become a little special to me because of the occasion on which I made it.

My cousins happen to be going back to school this weekend, and they are candidates as well.

I wanted to send them off with a homemade treat, so I thought a carrot cake would be a lovely way to do it.

There is something special about preparing food for people you love.

There is a little bit of care, time, and intention that goes into making something from scratch.

And what better way to send someone off to school than with a homemade cake?

So, without further ado, here is the recipe that makes my favourite carrot cake.

My Masavu Carrot Cake Recipe

Ingredients

For this recipe, you will need:

  • 3 cups grated carrots
  • 2 cups brown sugar
  • 1 cup raisins
  • 4 eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 3¼ cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 2½ teaspoons baking soda
  • 1 teaspoon salt
  • ½ cup milk

A few notes about the ingredients

I prefer using brown sugar because it gives the cake a slightly deeper, richer flavour compared with white sugar.

For the carrots, freshly grated carrots work best.

I recommend grating them fairly finely so that they incorporate nicely into the batter and distribute evenly throughout the cake.

And don’t skip the spices!

The cinnamon, cloves, and nutmeg are a big part of what gives this cake its character.

You can adjust them slightly according to your taste, but I find that this combination gives the cake that lovely warm flavour without allowing any single spice to overpower the others.

How to Make the Carrot Cake

Step 1: Prepare the carrots

Start by washing, peeling, and grating your carrots.

Set the grated carrots aside while you prepare the cake batter.

I prefer to prepare the carrots first because once the wet and dry ingredients are mixed, you want to work relatively quickly to get the batter into the baking pan and into the oven.

Step 2: Beat the eggs

In a large mixing bowl, beat the four eggs until they are well combined.

You don’t necessarily need fancy equipment for this. A whisk or wooden spoon can do the job.

Step 3: Add the wet ingredients

Add the vanilla extract, brown sugar, and vegetable oil to the beaten eggs.

Mix everything together until it is well combined and the sugar begins to dissolve into the mixture.

The vanilla is especially important here because it adds a subtle sweetness and helps bring out the flavours of the spices later.

Step 4: Prepare the dry ingredients

In a separate bowl, combine your dry ingredients:

  • Flour
  • Cinnamon
  • Cloves
  • Nutmeg
  • Baking soda
  • Salt

Mix the dry ingredients thoroughly.

This step is important because you want the spices and baking soda to be evenly distributed throughout the flour.

Nobody wants to bite into a piece of cake and suddenly get a mouthful of baking soda!

Step 5: Combine the wet and dry ingredients

Gradually add the dry mixture to the wet mixture.

Stir gently until the ingredients are well incorporated.

Try not to overmix the batter.

You want everything combined, but there is no need to keep stirring once the flour has been incorporated.

Step 6: Add the milk

Add the ½ cup of milk to the mixture.

The milk helps loosen the batter and gives it a consistency that can easily be poured into your baking pan.

Mix until you have a smooth, thick batter.

If the batter feels extremely thick, make sure everything has been incorporated properly before adding any additional liquid.

You want a batter that is thick enough to hold the carrots and raisins but still easy to pour.

Step 7: Add the carrots and raisins

Now comes the fun part.

Add your grated carrots and raisins to the batter.

Fold them into the mixture until they are evenly distributed.

At this point, your batter should look colourful, with the grated carrots and raisins spread throughout.

And honestly, this is usually the point where I start getting excited about the cake.

Step 8: Prepare your baking pan

Line your baking pan with baking paper or grease and flour the pan to help prevent the cake from sticking.

Pour the carrot cake batter into the prepared pan.

Use a spatula or the back of a spoon to spread the batter evenly across the pan.

Step 9: Bake the cake

Preheat your oven to 175°C for about 10 minutes.

Once the oven is properly heated, place the baking pan inside.

Bake the cake for approximately one hour.

However, baking times can vary depending on the oven and the size and shape of your baking pan, so don’t rely entirely on the clock.

Step 10: Check if your cake is ready

After about an hour, insert a clean wooden toothpick into the centre of the cake.

If the toothpick comes out clean or with just a few moist crumbs attached, your cake is ready.

If there is still wet batter on the toothpick, give the cake a little more time in the oven and check again.

Once it is done, remove the cake from the oven and allow it to cool before cutting.

And there you have it!

Your homemade Masavu carrot cake is ready.

Serving Your Carrot Cake

There are so many ways to enjoy this cake.

Personally, I think it is perfect as an afternoon snack with a warm cup of tea or coffee.

It also makes a lovely homemade treat when you have visitors or when you simply want something sweet without reaching for a packaged snack.

You can enjoy it plain, which is how I usually prefer it, because the carrots, raisins, and spices already give it plenty of flavour.

If you are making it for a special occasion, you could also add a simple topping or frosting.

But honestly, sometimes simple is best.

The cake already has quite a lot going on.

A Few Tips for Making Your Carrot Cake

1. Use fresh carrots.
Freshly grated carrots provide better flavour and moisture than carrots that have been sitting around for too long.

2. Don’t skip the spices.
The combination of cinnamon, cloves, and nutmeg is what gives this cake its warm and distinctive flavour.

3. Don’t overmix the batter.
Once the flour is incorporated, mix just enough to combine everything.

4. Keep an eye on your oven.
Different ovens behave differently, so start checking your cake toward the end of the baking time rather than assuming every oven will take exactly one hour.

5. Let the cake cool before cutting.
I know it can be tempting to cut into a freshly baked cake immediately, but allowing it to cool helps it set properly and makes it easier to slice.

Final Thoughts

There is something really satisfying about making a cake from scratch.

Maybe it is the process of putting all the ingredients together.

Maybe it is the smell that fills the house while the cake is baking.

Or maybe it is simply knowing that you made something delicious with your own hands.

For me, this carrot cake has become more than just a snack.

It reminds me that living a healthy lifestyle does not have to mean living a life without treats.

I believe there is room for balance.

There are days when I want a fresh salad, vegetables, fruits, and lighter meals.

And there are also days when I want a slice of homemade cake with a cup of coffee.

And this carrot cake fits perfectly into that philosophy.

The carrots give it a beautiful texture and moisture, the raisins add sweetness, and the cinnamon, cloves, and nutmeg make every bite warm and flavourful.

Most importantly, it is something I can make at home and share with the people around me.

And that is exactly what happened when I made this cake for my cousins as they are headed back to school.

It is my little way of sending them off with something homemade, comforting, and made with love.
